Crock Pot Chicken Fajitas

It's been a long time since I shared a recipe on here. I do cook food around here. Usually we are all too hungry to take pictures of it though. But this recipe...it's so good. I had to share it.

I first became acquainted with these crock pot chicken fajitas at a friend's house. She found them on Pinterest, that great saver of busy moms' dinnertimes everywhere. So I went and stalked her Pinterest boards until I found them. I'm not creepy at all, right?


These are so easy, so good, and so messy. It's worth it. You can find the original recipe here at Stacy Makes Cents.

Crock Pot Chicken Fajitas

  • 1 yellow onion, sliced
  • 3 sweet peppers, sliced
  • 1 ½ pounds boneless chicken breast or thighs
  • 1/4 cup of chicken broth(optional)
  • ½ teaspoon salt
  • 2 tablespoons cumin
  • 1 ½ tablespoons chili powder
  • Squirt of lime juice(I use the bottled kind)
  • Tortillas or rice
  • Toppings(sour cream, cheese, guacamole, lettuce, tomato, all that good stuff!)

  1. Combine sliced onion and peppers in the bottom of a greased crockpot.
  2. Lay chicken on top of veggies.
  3. Pour chicken broth over top.
  4. Sprinkle everything with cumin, salt, and chili powder.
  5. Give a nice quirt of lime juice over the top.
  6. Cover and cook on low for 4-8 hours (or on High for 4 hours) or until meat is shreddable.
  7. When meat is done, shred with two forks and stir back into juices. 
  8.  Serve on tortillas or over rice with your choice of toppings.

I have an awesome sister. We didn't always get along growing up though. Two different personalities sharing a room, touching each others stuff, taking each others shoes without asking...

I still have vivid memories of her popping the head off my brand new Courtney doll.

We get along better now. Probably because we aren't living together and touching each others stuff anymore. We got each other's back. We also share a love of thrift stores. So when she's out thrifting, she lets me know when she finds amazingness.

Green Chair

Like this green chair. For two bucks. Because that's how thrift stores roll when they've had a chair sitting there for months and they are desperate to be rid of it. She called me while we were on vacation to see if I was interested. Who can pass up a $2 chair?

It's not easy being green when you're an old chair. That 60's and 70's green...yum. A wonderful color reminiscent of avocados, snot, and baby poop. No one could see it's greatness. It needed a home.

Green Chair White Pillow

Right now it's staying green but I think it would be great to reupholster it eventually. It's in great shape and comfy so it's the perfect candidate! I'm thinking a nice nubby neutral fabric in gray, white, or cream. I'd like to do away with the skirt on the bottom and let it show a little leg too. I love leggy furniture.

3 Tips for Perfect Designer Curtains

It's been a long time, y'all. I've been out sick the last couple weeks. I fought it for a week but I couldn't escape. None of us could. And so I've been offline for a bit.

But I'm back now!

So. Curtains. Let's talk about hanging curtains. And how almost every store and catalog gets it wrong. It's one of my pet peeves because it means that I can never find what I want in the store. They have too short curtains hung just level with the window frame.

No.

Just, no.

If you want your curtains to look like they were hung by a real designer, here are the three tips to remember!


1. Hang your curtains high. Higher curtains create an illusion of height and make a bigger impact in a room. Imagine a grand old room with large windows and dramatic loooong drapes covering them. Like something from Pride and Prejudice. You can get that big impact with modern curtains just by hanging them higher.


Unless you have a super high ceiling or a funky angle near the windows, curtains to the ceiling are amazing. My house has standard 8' ceilings so I hang my curtains as high as they will go, almost to the ceiling and at least a foot above the window frame. This is why I can't buy curtains in a normal store because I need extra length to reach the floor. If you have a super high ceiling, hang curtains about 6-12" above the window frame. Too much space between the rod and the window might look a tad awkward.

2. Get the right length. Standard curtains are 84". Since I raise my curtains higher, I need 95" curtains. Because of the extra length, my curtains puddle a bit on the floor. I happen to like puddling curtains which is great for me because I'm kinda lazy and don't want to take the time to shorten them. If puddled curtains aren't your look, buy longer and have them hemmed, or get some iron-on fabric tape to hem them yourself.

 

Too short curtains are like a man walking around in too short trousers with a suit coat. Your curtains should always be right at floor length or longer. The only time shorter curtains are even allowed are for windows over sinks and built-ins, like in our nursery. You can even pull off long curtains over heaters if you layer them over blinds for privacy, hang them wide, and/or pull them back out of the way.

If your windows are shorter(like ours upstairs), stay away from the short curtains! It will only accentuate the shortness of the window. You want to create the illusion that your windows are bigger than they are. Hang them high and make sure that they at least skim the floor at the bottom.

3. Hang curtains wider than the window frame. This adds to the impact and the illusion that your windows are bigger than they are. Plus, it lets in maximum light! If your curtains are open, no part of them should be over the window. My rule is at least six inches out from the outside of the window frame. If you have a window that is butted up against a wall, hang the rod as close as you can to the wall and extent it out at least 6 inches on the other side.


In our master bedroom, we have a big double window and a small single window. It felt off balance. To "fix" it, I hung the curtains over the small window exactly like the ones over the big window. It created a backdrop for our bed while also making the small window look bigger and balancing out the room.


Also notice the long curtains with the short windows. Imagine if I'd used short ones that stopped right under the window sill!

Next time you're tempted to buy those 84" curtains, just say no! Many times you can buy the same curtain online in the longer length. Do what the designers do. Hang those babies high and wide and see how much of a difference it makes in your room!







Inspiring Creativity :: My Top 5 Favorite Sources of Inspiration

Every creative has their muse. I've discovered I do a whole lot more creative thinking when I surround myself with great inspiration sources. And the original ideas I come up with are better as a result. This is part of feeding and nurturing your creativity!

I have a few favorite places I like to hang around that inspire me.


1. Pinterest - This one goes at the top of the list. It's like a buffet of ideas. And you don't have to pin everything either. I've become way more selective in my pins over the past year or so that I have been using Pinterest. I've even gone back to old pins and weeded them out.

Sometimes, I might not use a particular idea that I've found on Pinterest, but it will get me thinking in a direction I would have never thought of before. That's the great thing about inspiration. And that is creativity.

2. Better Homes and Gardens - I love, love, love, love Better Homes and Gardens! It was the very first home magazine that I was exposed to, back when I was a young warthog. Loved it then, love it now. I still check out their magazines when I'm in line at the store or at Barnes & Noble. And there's the website too, which is full of fun things, pretty pictures, and fabulous ideas!

3. Nesting Place If you haven't checked out The Nesting Place, then do it. Do it now. Probably my absolute favorite blog! Myquillin(The Nester) shares her home and how things don't have to be perfect to be beautiful.

4. Young House Love Another favorite of mine! John and Sherri are DIY'ers at Young House Love. A lot of what they do is pretty ambitious to me, like laying flooring and building pergolas, but they break down the steps and how they go through the process of making their plans come to fruition. But it's not all big DIY projects. They have easy ones too.

5. TV We don't have our TV hooked up to an antenna, much less cable, but I do love me some home shows! If I am anywhere that has cable that I can control, you will probably find me watching HGTV or the History Channel. I watch it like other people watch sports. There might be insults, yelling, and eye rolls. Especially for that one guy that always decorates in purple. Seriously, dude, pick another color from time to time.

July Review {2014}

Yep. Another review to take us into the weekend! I hope your week has been great! My week was spent with a clingy toddler and a teething baby, which means not a lot has gotten done this week. But I wouldn't trade them!

I would like to at least put away the laundry that has taken over my bedroom. Because that would be great. Oh well. 'Tis a season that will pass all too soon.
